I uploaded the list of codecs I can record in, I want the highest quality for a DVD to be able to play.

All the dvd's I have ever made have been mpeg2. Also dependent on the machine you plan on playing back on they may need 2 pass VBR encoding. Pioneer DVJ's are a prime example of this.

Mpeg2 if you want to be absolutely sure that every dvd player can play it

ALL DVD's are mpeg2. As Dave says, a two pass VBR encode may work best for DVJ playback. Otherwise it's a trade off between bitrate and length. An hour on a DVD (full 4.7gig) is obviously better quality than putting 2/4/8 hours onto a disk (the bitrate decreases).
