Projector in a mobile cart, with a bigg ass auto battery. Then just the same software you use for "normal" static vj performances.
If they use kinect, they can use quartzcomposer or something else. If it's really with walking people, they could use a harness with a small projector on it. The laptop can be pre programmed and could be controlled with a small midi panel (or game controller).
