Multiple displays on MBP with resolume arena 4

I,ve got a gig coming up at a club with a large plasma screen behind the DJ booth. What we want to do is have project around the screen with the plasma in the middle. Now this would work with Arena's advanced display option if I could connect 2 displays to the MBP but I'm not sure what the best way to go about doing this would be.

I've never used any of the Matrox products but from what I understand they stretch the image over multiple displeays instead of offer you each as a display option? This would not work as I want the screen's display to be inside that of the projectors. Would a USB to VGA adapter do the trick? I'm outputting at 800 X 600 res and using a 2011 MBP 2.2 Ghz i7. Any help or suggestions would be much appreciated.
