Is there any way to extract an image, ie: person from a black and white film using After Effects? Would i have to extract one shade at a time then layer them over each over? Or is there another way?

So you are wanting to isolate a person from some footage? What do you mean shade by shade?
Removing something from footage, without the help of chromakeying is extremely tedious work. I hope you are ready for many hours of repetitive editing.

That is a process called ?roto-scooping'.
If the object (person) and the background are not clearly seperated (like a blue screen or blue air), you have to draw a mask arround the object each frame. (you can alter the mask from the previous frame to make it easy).
You could try and play with motion-tracking, but that will never produce the sweet result you are looking for.

Have you tried an animated mask in AE?
You might get some cheap'n'gritty Vid-EE-Oh effect by lumakeying.
